We are currently recruiting for a Full-Time Sous Chef and Full Time Head Waiter/Assistant Restaurant Manager to join our team.

Sous Chef

Job Title: Sous Chef Place of Work: Prego Restaurant/ Waterfront Hotel Kitchen Responsible to: The Board of Directors, The Head Chef, Operations Manager, Restaurant Manager Responsible for: All Kitchen Staff

Main purpose of job:
To ensure in the Head Chefs absence the smooth efficient and profitable running of the kitchen providing our customers with high standards of product

Hours of work:
According to the needs of the business, typically five days over seven. (Some straight shifts may be required) Additional hours may be required from time to time and these will either be paid or should be reclaimed when business allows in the quieter periods

Main Duties: • Main duties and responsibilities • Responsible for the standards of performance of the kitchen ensuring that food output achieves and maintains the required high standard expected by our customers • Responsible for kitchen chefs, including the breakfast chefs and kitchen porters as support for the head chef • To ensure all employees that you are responsible for receive training to the required standard. • To ensure all staff receive contracts of employment and are made aware of the terms and conditions in the handbook • To ensure the kitchen achieves 30% wages cost to takings • To ensure stock control is in order and that you achieve GP of 70% • To place orders with our nominated suppliers as directed by the Head Chef • To attend weekly head of department meetings • To discuss and act upon customer feedback with the restaurant manager • To comply with all health and safety and fire regulations • To liaise with the board and Head Chef with regards to menu compilation • To help provide specials board, which is to be predominately fish, based • To ensure and document procedures, safe methods, temperatures etc. as required by the EHO • Assist in staff recruitment and welfare

Shift Pattern – based on current opening times January 2020 (Subject to change) Monday – Thursday shifts are evening only except for events Friday Lunch and evening Saturday Lunch and evening (Open All Day) Sunday Lunch and evening (Open All Day) Shift patterns may vary

Head Waiter/ Assistant Restaurant Manager

Job Title: Assistant Manager / Supervisor Place of Work: Prego restaurant & Function suite Responsible to: Restaurant manager Responsible for: Waiting staff including pass person and dessert person, bar staff.

Main purpose of Job:
To ensure our customers receive a meal experience that leaves them eager to return to Prego as soon as possible. To ensure all staff are performing their roles in a friendly and professional manner offering help and training when required.

Main Duties:  Check the restaurant is ready for service; Lighting Levels, Air Conditioning, Music levels  Check uniform standards  Allocate stations/jobs  Monitor standards  Communicate messages to the team  Train staff when appropriate  Advise Manager of when tables are ready  Take orders  Monitor bill payments

Ensure any customer complaints or comments are brought to the attention of the manager. As the assistant manager you will be working with the restaurant manager approximately 3 shifts per week and without 2 shifts per week.

Directions

From J25 M62 take A644 to Brighouse. Straight across the mini roundabout. Turn left at the traffic lights & go into the right hand lane, Sainsbury’s will be on your left. At the roundabout go straight across into the town centre on Bethel Street. (Ladbrooks on the left, Yorkshire Building Society on right.) Take the first left into the public car park. The hotel is situated in the left hand corner. Please do not hesitate to contact us if you have any problems finding us.
